I'm in a rutt.

I'm looking for new meals to fix our family. I'm tired of eating the same ole stuff every week and I've been trying to work on meal plans but it doesn't ever go the way I want it to. What are some healthy meals that I can fix? I'm in need of semi healthy because I'm looking into losing weight. Ex. Breastfeeding as helped me get back to my pre pregnancy weight but I haven't moved since. It's rather annoying actually.

Food tips, pointers, ANTYHING is greatly appreciated <3

broiled fish with roasted asparagus and rice is really good and pretty healthy

Actually the easiest meals that I have found and they are reasonably healthy are crock pot meals, you just cut up some veggies and meat and let it stew in the crock pot for most of the afternoon. It is yummy and my daughter loves to eat the potatoes from it.

My SO doesnt like pot roast but I've thought about trying to find other things to make in the crock pot. I'm just so tired of hamburger I wanna barf everytime I eat it.

The way I do my meals is pretty easy:

I pick a meat - usually something lean like chicken breast or pork loin (with the fat trimmed off).

I pick a veggie.

I pick a starch.

And I'm done with it. lol So, sometimes we will have chicken, rice, and peas in a casserole, or like last night we had pork loin, mashed potatoes, and broccoli with cheese.

Matt likes pork chops but doesnt ever want to eat it. I've finally started buying brocoli and making him eat it with Bryce. lol
I have no idea how to make a casserole. I need to look this stuff up I think. lol

It doesn't have to be pot roast, it can be any kind of meat. And if you want to put pasta in it then you just throw it in there about fifteen or twenty minutes before you are ready to serve it. It is a very toddler friendly meal and it is a pretty healthy meal for mommy.

Are there any specific diets you had in mind?

I'm trying a lower calorie diet at the moment, myself. My mom on the other hand did low-carb and has stuck with it for 5 years. She went from a size 26 to a size 14. I don't have the willpower for it though.

Here are some recipes from both diets that you may enjoy:

Chicken Enchilada Dip (We spoon it onto low-carb tortillas and eat them that way)

1lb of chicken, shredded, pre-cook it (boiling it works well)
1lb of mexican mix cheese
1/2 cup of mayo.
1container (or little box thing) of cream cheese
1 medium onion, chopped
1 small can of Chile Peppers
and either a packet or two of taco mix seasoning or Cumin. Add as much as you like to taste, it NEEDS it though, it how it gets it's flavor.

Mix everything together and spread in a cassarole dish. Bake at about 400 until everything is melted together and the top is golden brown.


Buffalo Style chicken melts (we use whole grain or whole fiber flatbreads.)

basically, all you do is spread sun-dried tomato pesto on the entire flat bread. sprinkle a layer of Asiago and Blue Cheese on top of that, Spread Buffalo Style Chicken breast you get from the Deli counter on top of that and I usually sprinkle some fresh mozzarella on top. I like to add in things like chick peas or roasted zucchini on it to make it healthier. Then you just fold it over and pop it in the george forman.


ETA: Wrong ammount of Mayo, lol. WAY too much.

i have garlic brown sugar chicken in the crockpot right now- to go with rice and little corn puufs and beans later!! wicked easy, yummy, and semi-healthy

Oh, you can crock pot everything from stew to BBQ pork!

Do you have to ternderize the pork for BBQ pork?

I'm "new" to making meals. We've just always fixed the same ole stuff so I'm clueless.

Crock pot pork chops
4-6 boneless porchops
1 can Golden Mushroom Soup
1 envelope Onion Soup Mix
1/2 of an Onion chopped
1/4 cup water

Combine all ingredients in crock pot and cook on low for 6-7 hours

I'm not exactly sure. We do it puller pork style, like the sandwhiches? I'm not much of a cook myself, I just know my mom has made BBQ pork in the crock pot.
