Cooking with Seitan

Hey I need some help ladies!! Anyone who has experience with seitan... please tell me your secrets!!
I'm in the process of making it for the first time (its boiling right now) but I'm pretty sure the recipe isnt going to have the chewy texture that I'm seeking.  
I want to be a pro at this so I need some tips.

I have no idea what that is... but I read the title and thought it was an altered spelling of Satan and I'm like.. damn this poor girl is cooking with my MIL.

I've been searching and searching... I've found lots of recipes but since the one I decided to try isnt exactly coming along as planned, I was hoping to find someone to speak with so I can ask all important questions ya know?

We fell in love with "Seitan O' Greatness" so I doubt we'll ever boil it again!!
