Best "good for you" recipes

Please give me some ideas...and each other!!!

We need to start eating better in this house, so I thought I'd look at some of your favorite "good for you" recipes

I think Green Chile stew is good for you
this is how i make it
1lbs of ground beef
1hot green chile
1 mild green chile or another hot
1 can of diced tomatos
2 cans of tomato sauce
6-7 potatos

Brown the meat. U can add about a 1/4 cup of flours if u want to make it thick if not leave it like that. peel ur potatos cut them add all in the pot u'll probably need 1-2 cups of water. add all chile tomatos and sauce stir and it takes about an hour to make. i love it

lol its not hot if u use mild but its good if u use two of the little hot green chile containers the chopped chile

Not sure how healthy this is.. but I think it's good...

CRANBERRY CHICKEN
4 boneless chicken breasts
1 large onion
3 garlic cloves
4T butter
1 egg
1 can of Whole berry cranberry sauce
Italian style bread crumbs
Whatever seasoning you'd like to season your chicken with ( I usually season mine with Italian Seasoning, Garlic powder, and Garlic Pepper.

Chop onion and garlic cloves and saute in butter. Slice chiken into bite sizes and throw in with onion and garlic. Cook chicken until tender and done. Put chicken into baking dish and mix in the cranberry sauce and 1 beat egg. Sprinkle with bread cumbs and bake for approximately 40-45 minutes at 350.

I made a really good stir fry while I was still pregnant.. but there's not like, a set recipe. I just kinda.. did it on my own.
At Woodmans they have a stir fry veggie package by the fresh veggies.. it just comes in a bag, all kinds of veggies. And tofu. I crumbled up a package of extra firm tofu and let it soak in some stir fry sauce (they've got an asian food isle or something like that at woodmans. it's the original stir fry flavor.. but you could really use whatever flavor you want, they've got lots to choose from) for a couple hours in the fridge. Put some oil in a pan.. I don't remember if I used vegetable oil or olive oil.. probably vegetable oil. Saute the veggies and tofu until the veggies are tender.. when they're almost done, add some more stir fry sauce. Serve over white rice.. or whatever kind of rice. It was sooooo good.

SLOW COOKER JAMBALAYA



Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 pound andouille sausage, diced
  • 1 (28-ounce) can diced tomatoes
  • 1 medium onion, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 stalk celery, chopped
  • 1 cup reduced-sodium chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons Cajun or Creole seasoning
  • 1 teaspoon hot sauce
  • 2 bay leaves
  • 1/2 teaspoon dried thyme
  • 1 pound frozen peeled and cooked shrimp, thawed
  • 2 cups cooked rice

Directions


In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth. Stir in oregano, Cajun seasoning, hot sauce, bay leaves, and thyme.
Cover, and cook on LOW for 7 hours or on HIGH for 3 hours. Stir in the thawed shrimp, cover and cook until the shrimp is heated through, about 5 minutes. Discard bay leaves and spoon mixture over cooked rice.

Quick and Easy Vegetable Soup

Servings: 6
"A low calorie, but filling, tomato-based vegetable soup. I use fresh vegetables when in season, frozen or canned in winter."
Ingredients:

1 (14 ounce) can chicken broth
1 (11.5 ounce) can tomato-vegetable juice
cocktail
1 cup water
1 large potato, diced
2 carrots, sliced
2 stalks celery, diced
1 (14.5 ounce) can diced tomatoes
1 cup chopped fresh green beans
1 cup fresh corn kernels
salt and pepper to taste
Creole seasoning to taste
Directions:
1. In a large stock pot, combine broth, tomato juice, water, potatoes, carrots, celery, undrained chopped tomatoes, green beans, and corn. Season with salt, pepper and Creole seasoning. Bring to a boil and simmer for 30 minutes or until all vegetables are tender.
Personal Note:
saute an onion,carrots and garlic in olive oil, then add the liquids as stated add diced potatoes, a can of corn, some green beans, a can of diced tomatoes, and seasonings (salt, pepper, Italian seasoning. creole seasoning: 2Tbsp onion powder, 2 Tbsp garlic powder, 2 Tbsp dried oregano, 2 Tbsp dried basil, 1 Tbsp dried thyme, 2 Tbsp fresh ground peppercorns (mixed), 1 Tbsp cayenne, 1 Tbsp celery seed, 5 Tbsp paprika red kidney beans and brown rice http://allrecipes.com/Recipe-Tools/Print/Recipe.aspx?RecipeID=13338&servings=6

i noticed everyone was giving you recipes with meat, and you don't eat meat haha.. so i gave you a vegetarian friendly recipe   if anthony doesn't like tofu, he can suck it up and eat it anyway. haha

and i'm great. i can't believe eden's already 2 moths.. she just had her shots last friday, but she handled them very very well. i heard you live in town again! we'll have to have a playdate and we can catch up on things.
and thank you.. jesiah is super cute too. by far one of the cutest i've ever seen in my life
