Calling all budget chefs!!

For the next week and a half my family and I are on a tight food budget do to a little miscommunication between DH and I and some overspending.

I need recipes that are low in carbs and very easy on the budget. Any suggestions would be much appreciated!

Ground beef!!!!!!!
You can make anything from soups to shepards pie to just "steaks", just about anything!! Tacos, are kind of low in carbs, so is the soup!

Yes. Luckly since the 4th of July is this weekend a lot of places have ground beef on sale. And a local super market has a great price on chicken breasts. So I got lucky. It looks like these will be my meats of choice. I so wish I would give in and touch my savings but I think that tightening our money belts will be much better for us in the long run.

Chili (dried beans, ground beef, onion, spices)

Bean Soup (using dried beans and salt pork)

Chicken Casserole (frozen veggies, boneless chicken thighs, rice, cream of mush soup)

Burrito Stack (cooked ground beef with taco seasoning, tortillas, refried beans, cheese....layer ingredients alternating into a 9x13 inch pan starting with tortilla and ending with cheese. bake at 375 for 20 mins until cheese is melty. top with lettuce, tomato, sour cream. mmmm).

Pot roast (roast meat, carrots, celery, onions, potatoes, herbs)

Whole roasted/baked chicken is the CHEAPEST form of chicken out there. and you can stuff it with veggies before baking and have DELICIOUS veggies (potatoes, asparagus, etc).

Choose fruits and veggies that are IN SEASON. (oranges during the winter, watermelon in summer, fresh corn in late summer/early fall, etc)

Small tips to save money...

Fattier ground beef is less expensive and can be drained after cooking
dark meat chicken is cheaper than even ground beef!
longer cooking meats (like roasts) tend to be less expensive
frozen veggies can be cheaper than fresh (canned is most expensive)
In many parts of the country pork is cheap because of the "swine flu" and crazy people not wanting to eat pork for fear of getting it

I LOVE shepherd's pie...I got a recipe from a friend for DRUNKEN shepherd's pie (once the meat is cooked, add a beer and some corn starch to it and let it thicken into a beer gravy almost....then layer into the "pie" just like you normally would)

That is just funny!

Oh, I think I will def. make a casserole or two. Last time I made one it lasted for like 3 days worth of dinners!!! That and a few nights of tacos and one or two of pasta and a chicken night or two and we should be set!

I just did not want to end up eating pasta for a week and a half!
