Good Vegetarian Recipes?

Hello! My husband and I are trying to go vegetarian for religious purposes.. we're gradually cutting out all meats in our diet. However, we're having a hard time finding good, easy recipes to prepare. We have one cookbook so far, but I'm afraid to really buy too many because I don't want to spend money on something we might not end up using.

So anyways, my question is, does anyone know of any good vegetarian cookbooks or websites with good recipes?

Oh, and another thing - I'm allergic to soybeans, so pretty much anything with a lot of tofu or soy products is out for me. That's one of the reasons it's so hard to find good recipes!

experiment with Tofu. also a good meat subsitute is something called Quorn. It tastes much like chicken but, it totally vegan.

Look at my chicken stew recipe. If you leave out the chicken and noodles and add rice I'm sure it would be very tastey. It's on page 23 of the recipe page under free for all.

i really like vegetarian chicken, however im not positive on the ingredients.

also i would use google and find online recipes. there are TONS of sites with vegetarian recipes and you wont have to pay anything for them. i like to collect online recipes and make my own cookbooks with the ones i like.

I have been vegi for 14 years and there are a ton of great cookbooks . My fav is Passionate Vegetarian by Crescent Dragon Wagon. It is a 1,100 page cook book with a little of everything. If you ever have any specific recipes that you are looking for let me know I'm always cooking so I know the good the bad and the easy.

We use an Italian Vegetarian cookbook which has lots of pasta and vegetables dishes. Not too much tofu or soy.

my fiance is a veggie and I eat meat but I cook for him so most of the time I just make one thing for both of us I use morningster and Boca products for almost every meal! They have good veggie burgers, ground beef subsitute and chicken stuff oh and breakfast sausage! I also make a lot of pasta dishes because you can leave the meat out of like any pasta meal  )
