Okay -- good.   I hate all those super fancy and technical recipes, and yeah I can follow directions but they totally don't turn out how it's suposse to! haha.

this one is pretty much shove everything in, slather and bake. can't really screw it up unless you under cook it.

Enchilada Stuffed Shells
Prep:20min. Bake:30min.

I made this last week an it was sooooooooo yummy.
I bought THE Taste of Home COOKBOOK, The new edition.
An I'm lovin it. So is my DH. He said " I should bought this a long time ago"
lol.












15 jumbo pasta shells
1 pund lean ground turkey (I used hamburger)
1 can (10 ounces) enchilada sauce
1/2 teaspoon dred minced onion
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon ground cumin
1/2 cup fat-free refried beans
1 cup (4 ounces) shredded
reduced-fat cheddar cheese

1) Cook pasta shells according to package directions.
Meanwhile, in a nonstick skillet, cook turkey over
medium heat until no longer pin; drain. Stir in
enchilada sauce and seasonings; set aside.

2) Drain pasta shells. Place a rounded teaspoonful
of refried beans in each pasta shell; fill with turkey
mixture. Place in a greased 11-in. x 2-in.
baking dish.

3) Cover and bake at 350 for 25 minutes. Uncover;
sprinkle with cheese. Bake 5 minutes longer or
until cheese is melted.

5 servings

Sausage Manicotti
Prep: 15 min. Bake: 65 min.

This is one I did the day befor yesterday, I had never had it befor an it was so good.




1 pound bulk pork sausage
2 cups ( 16 ounces ) 4% cottage cheese
1 package ( 8 ounces ) manicotti
shells
1 jar ( 26 ounces ) Italian baking sauce
( I used the chunky graden prego w/ onion,garlic,tamatoes in it)
1 cup ( 4 ounces ) shredded
part-skim mozzarella cheese

1) In a large bowl, combine uncooked sausage and
cottage cheese. Stuff into uncooked manicotti
shells. Place in a greased 13-in. x 9-in. x 2-in.
baking dish. Top with baking sauce.

2) Cover and bake at 350 for 55-60 minutes or until
a meat thermometer inserted into the center of a
shell reads 160 .

3) Uncover; sprinkle with mozzarella cheese. Bake
8-10 minutes longer or until cheese is melted. Let
stand for 5 minutes before serving.

7 servings.

Pumpkin Cheesecake Muffins

1 large orange
1/4 cup butter or margarine
1 1/2 cups sugar
1/3 cup dark brown sugar (packed)
2 large eggs
1 cup canned pumpkin
1/3 cup orange juice
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 1/4 tsp pumpkin pie spice ( I used almost 2 tablespoons)
8 oz cream cheese
2 Tbs light corn syrup
1 cup powdered sugar

Preheat oven to 350 degrees. Lina a muffin pan with muffin papers. Cut orange into wedges; remove seeds. Place orange wedges (peel and all) into a food processor. Pulse until pureed; set aside
In a large mixing bowl, beat margarine with sugar, brown sugar until smooth. Beat in eggs. On low speed, beat in pumpkin, orange juice and the orange puree.
In a separate bowl, whisk together flour, baking soda, baking powder and pumpkin pie spice. Add flour mixture to the orange mixture, stirring until combined. Spoon 1/4 cup batter into each muffin cup.
Beat together cream cheese, corn syrup and powdered sugar until smooth. Drop a tablespoon into the center of each muffin, pressing down gently so the cream cheese sinks a little.
Bake 20 minutes or until toothpick inserted near center comes out clean. After the muffins cool, keep them in an airtight bag or container in the refrigerator.
Yields about 16 muffins (I got 22 out of my batch)
Also the picture shows you can garnish with a swirl of rediwhip and a pecan. I used rediwhip and a sprinkle of pumpkin pie spice.

they are divine my only other suggestion....make sure you puree the orange really good or you get big chunks of zest...kinda bitter!

This is a pie. i have no idea what it is called. but omg it is gooooood. Times like these BG should have a drooling emoticon

6 tablespoons of flour
2 cups of packed brown sugur
,put in sauce pan and mix it up... add a 12 oz can of evaporated milk, half a stick of butter... half teaspoon of salt...teaspoon of vanilla.
cook and stir until it boils.
put in 9 inch pie shell. cook for 5 minutes on 400. then 350 for 25 minutes

My mom's new boyfriend requested a "sugar pie" so she called his mom and asked what on earth it was...and this was almost exactly the recipe she got. She said its fantastic and that you SHOULD NOT refrigerate it because it loses its flavor when you do (i don't know if its true). So, I guess its called a "sugar pie"!

Now I want pecan pie. (totally unrelated)

thanks for the advice on not putting it in the refrigater. I do too. Now i can wait until thanksgiving. all i want to do lately is cook and bake.

Me too. And decorate my house for the seasons and buy presents and eat my FIL's sugar cookies. I may have to BEG him for the recipe. its a secret recipe (seriously secret...it makes thin, crispy cookies rather than the fluffy ones and they are SOOO good dipped in hot chocolate...but its still 90 degrees here, so I'll have to try it in chocolate milk, haha). But, I'm having his grandchild and his grandchild wants cookies dammit! hehe. Think I can win him over with that?
