I agree with KCollins, they do take a lot of work, but are totally worth it in the end!

Easy Cheese enchiladas -

1 lb hamburger meat
1 pkg of taco seasoning
2 cans Wolf Brand Chili
White corn tortillas
1 big bag of the Kraft Mexican blend cheese (or store brand if it's cheaper!)


Directions
Brown your hamburger meat drain grease. Add the package of taco seasoning following directions on pkg, and then add the chili. Keep warm in pot on the stove.

Warm tortillas in microwave between moist paper towels. Roll the cheese in the tortillas and line in a casarole dish. Once you get your first layer spoon your chili mix over it and then cover in more cheese. Make additional layers the same way. Once finished making layers cover with foil and place in the over for about 10 min. at 350 giving the cheese enough time to melt.

Artichoke Dip

  • 14 ounce can of artichoke hearts 1 teaspoon hot sauce 1 teaspoon lemon juice 1 teaspoon garlic powder 1/2 cup mayonnaise 1 cup shredded Parmesan cheese 1/2 cup Daisy Brand Sour Cream


Drain and chop artichoke hearts. Mix all ingredients. Spread in an 8x8-inch pan and bake at 350 degrees for 25-30 minutes. Let stand for 15-20 minutes. Stir and serve.

Mexican Pizza

  • 1 prepared pizza crust 1 can refried beans 1 cup Daisy Brand Sour Cream 2 cans diced spicy tomatoes 3 cups assorted shredded cheese

Pre-bake pizza crust according to directions. Layer crust with beans, sour cream, then drained tomatoes. Top with cheese and bake at 450 degrees for 15 minutes. Serve with additional sour cream and salsa.

Cook Time: 1 hour, 15 minutes
Ingredients:

  • 1 pound lean ground beef
  • 1 cup chopped onion
  • 1 can (14 1/2 ounces) diced tomatoes
  • 2 teaspoonsWorcestershire sauce
  • 2 teaspoons salt
  • 1 1/2 cups corn kernels, or 1 can (15 ounce), drained
  • 16 ounces diced frozen hash brown potatoes, thawed, or about 3 to 4 cups diced or sliced raw potato
  • 1/4 cup flour
  • 1 green bell pepper, chopped
  • 4 tablespoons butter, melted
  • 2 cups shredded sharp or mild Cheddar cheese

Preparation:

Combine beef, onion, tomatoes, Worcestershire sauce, and salt. In a separate bowl, combine corn, potatoes, flour, melted butter, and chopped green bell pepper.
Pat the beef mixture into a 13x9x2-inch baking pan; top with the corn and potato mixture. Bake uncovered at 375° for 45 minutes; sprinkle with the cheese and bake ground beef casserole 15 to 20 minutes longer, or until browned and potatoes are tender.
Ground beef casserole serves 6.

Chicken Enchiladas

Ingredients:
4 pieces of skinless boneless breast cooked and shredded.
1 can of cream of chicken soup
1 16 oz tub of sour cream
4 green onions (chopped)
1 can diced olives
1 can diced green chilies
1 lb of cheese
1 can green enchilada sauce.
Corn tortillas
Oil

Preheat oven to 375 degrees
In large mixing bowl mix shredded chicken sour cream of chicken soup green onions olives green chilies olives and 1 cup of cheese.
Heat oil in pan, and put the tortillas in the oil to soften up usually about 5 sec
Than roll the mix in the tortillas and place in a pan repeat until mix is gone.
Once done spread sauce over the top of the enchiladas and sprinkle the remainder of the cheese
Bake in oven for 20 min or until cheese is melted or bubbly.

Banana Bread
Ingredients:
1/3 cup oil
2 unbeaten eggs
3 tablespoons milk
1 cup mashed banana (I usually wait until the peel is spotted with brown/black)
2/3 cup white/granulated sugar
2 cups flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder

Preheat oven to 375 degrees F
Grease/spray with nonstck cooking spay a regular loaf pan (roughly 8"x4"x3")
Sift all dry ingrediants together in a med-large bowl
Mix mashed banana, milk, eggs and oil in a small bowl
Add 1/2 the banana mixture to the dry ingredients, mix until smooth; add the rest and mix to combine.
Pour batter into prepared loaf pan.
Bake for one hour in preheated 375 F oven, or until knife inserted in middle of bread comes out almost clean.

This may have been posted here before but it's soooo good (plus I don't wanna go back and look)

Better Than Sex Cake (the pineapple/coconut cake)

Ingredients:
CAKE:
1 pkg plain yellow cake mix
1 stick butter, melted
1 c. whole milk
3 large eggs
TOPPING:
1 can (20 oz.) crushed pineapple packed in juice, undrained
1 c. sugar
1 pkg vanilla instant pudding mix
3 cups whole milk
1 container cool whip, thawed
1 pkg (6 oz.) grated or flaked coconut

Directions:
1. preheat oven to 350 degrees. lightly mist a 13x9" baking pan with veggie oil spray. set pan aside.

2.place cake mix, melted butter, milk, and eggs in a large mixing bowl & blend w/electric mixer on low for 1 min. stop machine, scrape sides of bowl, then increase speed to medium & beat 2 mins more. batter should look thick & well blended. pour into prepared pan, smoothing the top with spatula. place in oven

3.bake cake until it springs back up when pressed lightly with your fingers (28 to 32 mins)

4. meanwhile, prepare topping. place pineapple with its juice and the sugar in a medium saucepan over medium heat and cook, stirring, until the sugar dissolves & the mixture comes just to a boil (2mins) set pan aside.

5.remove cake from oven and immediately poke holes in top with straw or chopstick. spoon in the pineapple & sugar mixture evenly over the top of the cake.

6.place the pudding mix & cold milk in large mixing bowl & blend according to the package directions. spread the pudding over the pineapple layer with spatula. place pan in refrigerator for 30 mins to chill.

7.placethe whipped topping & coconut in a large mixing bowl and stir gently until well mixed. spread over the pudding layer and return to fridge to chill. chilluntil the topping has a chance to set (30 mins or more)
8.slice into square and serve

tastes best if made a day ahead of serving.

EEEK ~ it's long but worth it!!

my favorite choc chip cookie recipe is the one on the back of the bag of chocolate chips. It doesn't get any better ~ but I always add more chopped nuts.

Chicken A la Nicole!

3 boneless skinless chicken breasts
3 cups of rice
1 can of cream of mushroom soup
1 can of cream of chicken soup
Some Velveeta cheese (depends on how much you like cheese to how much you want to put in)

Boil the chicken until done and easy to pull apart.
Boil your rice
Mix the mushroom soup and chicken soup together, add a little bit of water, and cube up however much cheese you would like. the more the creamier!
when chicken is done, cut up into little cubes

mix all of the above. top with some shredded cheese and bake in the oven until the cheese is melted. its super easy and takes no time at all and its very tasty! this is a recipe i made up when i didn't have anything else in the house and the store was closed! hope you enjoy!!

TEXAS CAVIAR


1 can black beans rinsed and drained
1 can black eyed peas rinsed and drained
2 cans corn
2 cans diced tomatoes (I use the ones with onions and gr. chilies) drained
1 bell pepper diced
onion
1 small bottle wishbone Itallian dressing
jalepenos to taste

mix together in large bowl, tossing to coat well with dressing, serve with Fritos (you can use regular tortilla chips, but I find it tastes better with fritos)

Ladies, dont knock it until you try it... I thought it would be disgusting, and a girl from work made it and it is GREAT!

Raspberry Buckle


2 cups all-purpose flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 cup shortening
3/4 cup sugar
1 egg
1/2 cup milk
2 cups fresh or frozen red raspberries
1/2 cup flour
1/2 cup sugar
1/2 tsp ground cinnamon
1/4 cup butter or margarine

Grease bottom and sides of 9x9x2 or 8x8x2 baking pan and set aside.
Combine 2 cups flour, baking powder and salt.
In another mixing bowl beat shortening with an electric mixer on medium for 30 seconds. Add 3/4 cup sugar. Beat on medium to high speed till light and fluffy. Add egg, beat well. Add dry mixture and milk alternately to beaten egg mixture beating till smooth after each addition.
Spoon batter into pan. Sprinkle with raspberries.
In another bowl, combine 1/2 cup flour, 1/2 cup sugar, and cinnamon.
Cut in butter til mixture resembles coarse crumbs. Sprinkle over raspberries.
Bake in a 350 degree oven for 50-60 minutes or till golden. Serve warm. Makes 9 servings.

Can subsititute raspberries for fresh or frozen blueberries(2 cups).

my mom used to make the best cod! I've never been able to remake it but, here goes a try.

in a food processor she mixed mushrooms, red and yellow bell pepper and garlic. she chopped in the processor super fine until it was almost but not quite a paste. She'd top the cod w/the mixture and pan fry. Darn tastey!!!
