Healthy Eating!

Does anyone have any healthy recipes that are FILLING?! Something that won't leave me hungry?!   Please share here!

i DO!!!

i love potatoes.. when i get a choice of 2 sides at a resturaunt i usually pick like the baked potato and french fries. or hashbrowns. lol. my mom used to always tell me i was gonna turn into a potatoe... guess she was right. lol.

Ok...well I made my man some of his favorite soup last week and he LOVES it.
Potato Soup:

5 medium-sized potatoes, peeled and cubed
2 medium onions, finely chopped (I thought this recipe called for to much so I only put one in)
2 teaspoons salt
1 tablespoon butter, melted(I actually used two tablespoons)
1/2 cup flour
6 cups milk ( I used about 4-5, this made the soup quite thick. He added the extra milk to his desired thickness)
5 slices bacon, chopped (or equal amount of Bacon Bits, you can also exclude bacon altogether or experiment with other cooked meats, ie. chicken)

In a large sausepan place cubed potatoes and choppped oninos. Add salt, cover with water and place over medium heat. Boil potatoes until tender. Drain off water, replace cover and set potatoes and onions aside. Pour the flour into a medium or large saucepan. Stir the milk and the butter slowly into the flour over medium heat to make the sauce. When all of the mixture is mixed, increase heat to high and stir constantly until sauce is thickened. When sauce is ready pour on top of the potatoes and onions over low heat. Fry chopped bacon slices in a skillet until crisp. Drain on paper towel and stir into soup, adding salt and pepper to taste.

Yield: 6 servings

Some things to put in extra: saltines and shredded cheese

This is merely a guideline, if you think it needs more flour...add more flour...etc. This was the very first thing I cooked by myself and it was easy.
And soo delicious. A bowl filled up my man...and he used to be a high school football plater, wrestler and played baseball...they have big stomaches...

I love to eat a big old taco salad. I put seasoned hamburger meat, black olives, tomatos, green onions, shredded cheese(not much if your going for heathy) and loads of lettus. Athought it tastes even better with sour cream and taco shells I try and cut out calories where I can and I can live without those two items. Really load up on the veggies and munch away.

Not sure what it's called...so go with the instuctions to figure out the outcome =)

shred a zucchini with cheese grater on paper towels. Soak up the extra juice in the paper towels & put in a bowl. Add one small container of salsa (reserve a little bit), & a can of drained black beans and stir together.
Warm a greased saucepan. Put a wheat tortilla in it, then coat the whole tortilla with the mixture in the bowl (as thick as you want...I like it to be aout 1/2" high), sprinkle a little grated cheese, and put another tortilla on top. Wait a few minutes and flip when it gets warm and starts to bubble a little bit. Takes some skill to flip these puppies!!

Once fully cooked, serve with the reserved salsa on top and a scoop of FF sour cream. It's DELICIOUS & full of fiber so will keep you full for a good while!!

It's delicious!!! I made it Sunday night for dinner. I am normally a bottomless pit, but this is one of the few things I can barely finish =)

SO GOOD! even my hubby loved it and he doesnt like veggies!
