Off the wall question.... :

4 year Aniversary is on Thursday. I want to cook a nice meal for the hubby.

I'm thinking Prime Rib with Garlic Mashed potatoes.... It's a hell of alot cheaper to buy a cut of meat and make it myself than it is to go out for dinner. I can get a nice cut of meat at the deli where my mom works and get 20% off and we'll have leftovers...

AND I'm going to attempt to make a cheese cake with strawberry sauce. Any mommies out there havea good recipe for cheese cake???

I use the one on the philly cream cheese box, its works out really well. It can easily be tweaked to accomadate flavors.

No you can actually just use the pan that your graham cracker crust comes in, its a no bake recipe. It was the first cheesecake I ever made, its a lot easier than some of the ones that require baking.

If you don't have a springform pan you can use a regular cake pan but you won't be able to take the whole cake out once it's done. You could probably use a pre-made grahm cracker crust too, I never have but there would probably be enough filling for 2.

3 bars cream cheese softened. (2 of these can be substituted for 1/3 less fat but not all 3)
1 Cup sugar
2 Tbs. flour
1/4 tsp. salt
2 eggs
1 egg yolk
1/4 Cup milk
1/2 tsp. vanilla
Pinch of lemon zest (optional)

preheat oven to 450 degrees
Beat cream cheese with vanilla until really fluffy, gently mix in sugar, flour and salt. Then slowly mix in eggs and fold in the milk.

You will need a larger pan then your cheesecake pan filled 1/2" with water then place your cheesecake pan in the water bath and bake it together. If you are using a springform pan you will need to wrap the bottom in foil before placing in the water.

Bake at 450 degrees for 10 minutes
reduce heat to 350 degrees and bake for 50-55 minutes more
cool completely

It's actually really easybut every time I make it people are so amazed.

One more thing. You have to make the crust and bake it for about 5 minutes and let it cool if you don't use a pre-made one. You can crush up anything for the crust, it doesn't have to be grahm crackers. My personal favorite is smashed up vanilla wafers.
