Need recipes for guacamole and broccoli cheddar soup

posted 12th Mar
Do you have one that you have tried of either of those? Tomorrow, I am starting to get some organic produce delivered to my house weekly, and I have some avocados coming and some broccoli

guacamole-
avacodos
finely diced onion, tomato and cilantro
fresh minced garlic
jalepeno if you want
salt and pepper, cumin
fresh lime juice.
It tastes better after it was sat in the fridge for awhile, put a pit in the bowl to prevent it from turning brown.

One of my favorite salads:

Cucumber Guacamole Salad:
Smash avocado and add some lime juice, salt, and pepper.
Throw some thick-sliced cucumber that's also cut in 4's in it and mix it up!

Broccoli cheese soup

1 stick butter
1 onion, chopped
24 oz broccoli (frozen) or I'd guess 3 or 4 good sized heads fresh
64 oz veggie or chicken stock
1 1/2 lb Velveeta
2 cups milk
1 tbsp garlic powder, pepper to taste
2/3 cup cornstarch
1 cup water

Directions

  1. In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
  2. Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
  3. In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

thats why I hate googling recipes, I would much rather try a recipe someone else has made and liked.

OOOOOH Broccoli cheese soup sounds sooo good right now.
But I've not made it from scratch so that I can't help on.
Guac...I don't do measurements, depends on how I feel at that time. But...avocados(obviously) 2-3, depending on how much of a fat ass I feel like. fresh cilantro, lime juice, 1-2 jalepenos (with or without seeds, again depends), ground cayenne pepper, salt/pepper. Sometimes tomatoes, but tomatillos are better.
