Yummy dinner, 320 calories.

I have been counting my calories, again, for a little over a month. I have been testing out random low calorie dinner ideas. This is one I tried tonight just for me since SO is working late. It was delicious. So I thought I would share.

This is Chicken with mushrooms and onions with a Queso Fresco Chipolte sauce. The entire plate is 320 calories.


2 chicken tenderloins- 120 cal
1 cup sliced mushrooms- 60 cal
1 small onion sliced- 40 cal
2 wedges Laughing cow cheese, any flavor- 70 cal
1/4 cup 2% milk- 30 cal
Parkay no calorie spray butter
Canola oil cooking spray
Salt and pepper to taste

Chicken cooked on the George Foreman so it is blackened. Then Mushrooms and onions sauteed with Canola oil cooking spray. The sauce is just Milk, cheese wedges, and 5 sprays of no calorie butter. Heat until blended well and let sit for 2 minutes. Chop the chicken, put veggies on top, and cover with sauce. And then salt and pepper if you like. Very, very good.

That is the flavor of laughing cow cheese wedges that I used. They are my favorite!

Ahhh.. didnt know they had that flavor! Have to look for it now. Thanks for the recipe, I hate having to figure out calories.

It filled me up plenty! But the tenderloins are only about 60 calories a piece, so you could always add an extra one and still do well on calories.

I write all of my foods and calories down in a food journal. It keeps me on track. I have an addiction to really bad foods, lol. Counting the calories helps me realize what better choices are.

320 doesn't seem very much ... SO is on a very tight calorie controlled diet (he's morbidly obese), and he's supposed to have at leas 650 calories for dinner.

As far as losing weight, 650 calories for one meal is a lot in my opinion. But men do require more calories.

I eat smaller calorie meals more often throughout the day. But my calorie goal per day is more than 1200 and less than 1500. But I do not workout due to injuries and severe arthritis.
I get plenty of nutrition.
