I just roasted some asparagus in the oven with salt and garlic and holy smurf. SO SmUrfING GOOD! Now I need to decide on dinner. I really want tacos again BUT I also have peppers that need to be used up. I'm thinking about doing tacos for myself and LO and for DH, maybe sausage sandwiches. Any other suggestions?

Hold the asparagus at the bottom and middle of the stalk and bend it until the end snaps.off, discard that part and repeat. Rinse and dry it. Spread out the asparagus on a foil lined baking sheet and drizzle with olive oil, then sprinkle with salt and pepper or salt and a little garlic.powder, squeeze of lemon if you like it. (I dont) Bake at 425°F for 7-10 minutes.
I have never roasted Asparagus but, I am curious to know how you did. Me personally.. I can't stand the stuff (I actually don't like veggies at all) so it is really no surprise how limited I am with knowledge when it comes to cooking veggies.
DH LOVES Asparagus. It's actually his favorite of all veggies. Usually when I make it, this is what I do.
Put about a 1/4 inch of water in a medium pot. Add butter. (I don't measure it) and salt. Bring water to a boil and add Asparagus. Cover and boil for so long.
I don't know how long I cook it for either. I just take it out when it is at it's pretties shade of green. Aaron tells me every time it is perfect because it has a slight crunch to it.
I guess a drop of lemon juice also gives it good flavor.
