I wouldn't use olive oil (the taste is off and sometimes doesn't set up right), but you can use canola oil instead.

You can use apple sauce.

I've used apple sauce, mayo, yogurt, and mashed banana.

I don't have either, Cnala oil or apple sauce

I tried olive oil once and the cake wouldn't hold together even when I over cooked it trying to make it hold.

If it calls for a 1/4 cup of oil, use 1/4 cup of banana.
