Cheesy bacon potato soup.

Give me a recipe you've tried and was good! I can obviously Google recipes, but I want to know if any turned out amazing

Right! LOL. I have potatoes and bacon I need to use.. so it's either potato soup or fried potatoes with cheese/bacon/ranch on top.

Oh man, I have an amazing soup recipe from my manager at work. He's a single dude and makes the best food! I lost it though, I'll see of he can send it to me again. So deelish!!

DH just made it and we're about to eat it!!! It's:


One package of cubed hash browns (or potatoes)
One stick unsalted butter
One green bell pepper (or two sticks of celery chopped)
One small (red) onion chopped
One can of cream of chicken soup
One pint of half n half
Two whole milk
One cup shredded cheddar cheese
Toppings chopped green onion or thick crispy bacon (we used bacon)

Thaw frozen pot
Saute onion and celery in butter in a big ass pot
Add all ingredients
Med heat for 30 min
Yummmy time!!

We're having it with garlic bread!

I used like 8 potatoes and baked them until they were done. Then I peeled them and cubed them. Half if them I put in the food processor and poured acup of chicken stock in and pureed it to a soup consistency.

Then I took some celery, onion and bacon and chopped it up and sauteed it. I drained the grease for the most part and dumped that, the potatoes (pureed and chunked) into a crock pot and added a can of cream of chicken, cream of celery and cream of mushroom soup and a cup of shredded cheese.

Best. Soup. Ever.

Add a splash of milk if its too thick.

I dunno how I feel about all of those cream of ____ soups, lol. The blending part sounds like a good idea (would get it thick) but could I use the cream of mushroom and then half and half with some flour? I saw a few recipes using that.

I don't see why not. I like doing the potatoes because it gives the potato texture and taste to the soup part too.

I didn't think I would like it with the different soups either, and it looks really nasty before you mix it, but everyone here loved it.

yum!!! i'll take a bowl right now!!
i'm very much a non recipe following kind of person. lol. i would just cube my potatoes and cook them till soft and fry up the bacon (if you have onion i'd add some finely diced onion to the bacon while you fry it) and then crumble or cut the bacon into small pieces. put the potatoes, onion and bacon in a kettle and add milk and cheese and salt & pepper to taste. if you want it thicker you could do flour, but if you have plenty of cheese it will get nice and thick just from the cheese.
i'd also add carrots if i had them on hand. =)
