Lemon Chicken? Or Lemon Glaze? Ideas?!

posted 20th Feb
I have a crap ton of lemons MIL gave me, fresh off the lemon tree. I have no clue what to do with these suckers.
I have a huge pack of chicken breast I divided up and froze for meals. Does anyone have any good chicken breast recipes that involve lemons? Maybe like a lemon glazed chicken? Or some kind of chicken with pasta and a lemon sauce?
Nothing is really catching my eye on google. I'll be willing to pair the chicken with pasta or rice, too. I have tons of veggies for side dishes. I have a really kick ass crock pot, so I'll take a crock pot recipe also.

Thanks!

Put chicken in a pan. In a bowl mix up cream of chicken and cream of mushroom soup. Add any spices you want (I add Dash or Lemon pepper). Then slice up a few lemons. Squeeze the juice of one lemon in the soup mixture. Add a little wine or some water to thin it a little bit. Then pour soup mixture over chicken and place a slice of lemon on each chicken. Bake for an hour at 400. This is best served with rice because the gravy is amazing paired with rice. lol.

For veggies, I love to either roast or steam them in this mixture:

Toss veggies in olive oil, lemon juice, spices, fresh garlic. Place on cookie pan and broil them till they are cooked the way you like them. Keep an eye on them because they can burn fast. Then take them out and toss with a little Parmesan cheese. If you decide to steam them, switch the oil out for a little butter and some water.

Your welcome. Its so yummy. Its a family favorite. If you want to take it one step further, you can bread the chicken and lightly fry them first but that makes it even more unhealthy but it does enhance the flavor.

My husband marinades it in lemon juice with chopped onions and I think some tumeric? Then cooks or grills it up. It's delicious!
