Stuffed roll help.

Ok so I usually make chicken stuffed rolls or pizza stuffed rolls etc...

I am making chicken soup for dinner tonight and we have left over roast beef from last night, so I figured we would just have chicken soup and beef sandwhiches. But then I got to thinking of making a beef stuffed roll instead.

What would you add in a beef stuffed roll? I dont have any green peppers, but do have onions and mozza cheese and grated carrots, does that sound good? It would either be a parm cheese roll or a mayo based roll. lol

Or any good easy recipes you have?

hmmm. I don't really think that sounds good with chicken soup. Maybe save it and make nachos or something out of it tomorrow.
