What the heck can I make?!

I need to make dinner tonight. I have shredded chicken. That's about all.

No, really I have:

frozen peas/carrots
probably 5 eggs
pasta
rice
onions
shredded mozz cheese

I don't want to just make pasta and throw the chicken in, BUT I don't have milk, bread, any other cheese, pretty much anything. I will not be going grocery shopping until Sunday night because J and I are leaving for the mountains tomorrow morning.

any soup? or chicken stock?

I was looking at casseroles, but I used the last of the chicken broth making the shredded chicken.

I don't think I have the cream soups. It doesn't help that I watched Rachael Ray this morning and Travis from the Doctors was on talking about what insect parts you can find in things.

Chicken casserole. Chicken, peas, carrots and rice in a casserole dish, add seasonings, water cover with cheese and bake.

i would probably end up making a chicken pasta....chicken and rice. Or like a chicken omelet?

yeah I did something like that and I didn't have the other 7 ingrediants needed for the recipe!

Cook the rice with the casserole. Follow the rice/water ratio on the package. 350 until the chicken is fully cooked.

Oh the chicken is already cooked. I buy in bulk, cook and shred it, then freeze it. So, just until heated through? I may just cook the rice first, then layer and add some chicken broth (I found some!) and seasonings along with the chicken and veggies/cheese.

Sure. I cook it all together so I wouldn't know the other way. Lol but, that sounds great!!!

lol I usually do too! It's just soooo much cheaper to buy the chicken and freeze it in portions....however, it makes throwing something together more difficult. I could have done chicken parm and pasta if it wasn't shredded!

Fried rice.. All I could think of when I read this.

If you have bbq sauce and hamburger buns you could make pulled chicken bbq sammiches
