chicken enchiladas

how do you make yours?
I have never made them, but I have a pretty good idea of how to. Just want to make sure I am not missing anything.

I'm lazy....

I boil my chicken and shred it. Lightly fry corn tortillas. I put a little green chili sauce at the bottom of the pan. Put some sauce with the chicken. Fill and roll tortillas. Bake for like 20-30 mins covered, uncover, add cheese, and cook until that melts.

Well, I make chicken enchiladas suizas because I hate red sauce enchiladas!

Yum. That sounds so good right now. I've been craving Mexican lasagna too

I really looking forward to it. We are going on "vacation" to visit family next week and making birthday dinner for DH and my brother. My mom is making beef tip burritos, I am doing the enchiladas, my sister is making chile relanos and SIL is making all the beans, pico, guacomle etc. It's all I have been thinking about,lol

Here we do green chili chicken

Chicken, cream of chicken soup, cheese and green chili ( I use onion and garlic for flavor) layer the mixture between. Lightly fried corn tortillas.

Oh and red I sometimes use turkey, but it's mainly beef

So make the red chili and and layer with cheese inbetween fried corn tortillas

lol, better than I can cook from scratch, and so much faster. So when I'm dying from starvation, it's awesome!

Make it for both. Red chili quickest way is to get the powder and prepare like it says on the package. If it doesn't have a recipe it's just the powder, water, flour ( to thicken) garlic salt onion powder cumin a tad but of Oregono And salt to taste. Add cooked ground beef and its done ( well that's the quickest for this enchiladas

Very lightly fry a stack of corn tortillas,. then dredge each one through the enchilada sauce. Put the chicken and seasonings in then fold it up tight and place them a baking sheet or pan. Then pour the remaining sauce over the top of the enchiladas, then add cheese and whatever toppings I am using.

I make chicken enchilada casserole. Fast, simple, amd delicious.
