How do i make this COOKIE!?

A cookie this shape and similar in size.
(maybe a bit smaller)
Already butchered one batch of dough  
(i just need help with the cookie, i know the frosting and he has the edible ink markers)

I flatten 'n try to shape it but it's still.. blobby.
Do i need to find a large, rectangular cookie cutter?
Do i need to do something different with my dough?
Am i not letting it cool long enough on the sheet?
They're sugar cookies for goodness sake  

We're making these, but my son's doing 'em for his v-day party at school (on thursday)
and i can't for the life of me get them that size/shape, with out breaking or something.

HELP!

I read somewhere to let it rest on the cookie sheet for at least 2 mins or so before moving to a wire rack to cool before frosting. I would also suggest a cookie cutter in that shape, it would be easier than molding a rectangle by yourself. Good luck!

mannn! I did let 'em rest like that   i think mine are just too...thin? hmpff.
i'm definitely going to go look for a cookie cutter when we're out today.

Use fondont, then in the baking isle they have pens for writing on food. Badda bing badda boom..

They might be to thin. Maybe make a thicker dough but not to thick and then let it rest.

that's the part i know how to do. we already have the markers 'n everything.
i need help making a cookie that won't fall apart.

I'd probably refrigerate the dough so it gets a bit stiffer and then use a rolling pin.

just googled it, guess i could've done that first  
says to roll it out 'n then just cut it into rectangles..duh haha

Also you should freeze or refrigerate them for about 15 mins prior to baking.

yeah, last time we made sugar cookies i followed a different recipe that had me refrigerate it for an hour + 'n roll it out. this one didn't, and was definitely different to work with.

he wants to make them a "letter" though.
we aren't decorating til tomorrow,
but doing 17 personalized letters (he's in first grade), definitely wanted to get the baking done today.

Oh okay... Hmmm what about just pre made cookie dough? thats what I would do. Then ya cookie racks are always good for cooling. But if you want to do homemade then here are a couple ideas:

MOIST SUGAR COOKIES

1 1/2 sticks butter
1 c. sugar
1 egg
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. sour cream

Mix ingredients to form dough. Chill dough. Roll out dough to about 1/4 inch thickness. Use cookie cutters to make cookies. Bake on ungreased cookie sheet at 375 degrees for 8-10 minutes.




GRANDMA'S "DOUBLY DELICIOUS" PEANUT
BUTTER COOKIES

1 c. shortening
1 c. brown sugar
1 c. peanut butter
1 c. sugar
2 c. flour
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking soda
2 eggs
1/2 to 3/4 c. peanuts, chopped (optional)
1 tbsp. cinnamon (optional)
1 banana (makes cookies moist and richer) (optional)

Mix all ingredients together except for the flour. Mix until batter is creamy and smooth. Add flour 1/2 cup at a time, until ingredients are completely mixed together. Mix for about 5 to 10 minutes. Make sure that it is mixed thoroughly. Roll dough into 1 inch balls and place on a cookie sheet. Make criss-crosses on each ball with a fork dipped in sugar, making sure not to flatten the ball all the way. Bake at 350 degrees for 10 minutes or until golden brown. Do not overbake.
