Vegetarians.

My husband is going on a low-purine diet for gout managment, and I've made the decision to do it woth him for support and my own health. For the most part we'll be living on grains, fruits and veggies as it's suggested we consume no more than 6oz of poultry and fish daily.
So...vegetarians, I need your help. I've never restricted my meat intake so drastically before. I love fruits, but for some reason just have never really been a fan of veggies. What are some of the staples of a vegetarian diet? Where are some good places to find vegetarian recipes? Any recommended reading materials?
I need some enlightenment here, lol. Since fruits, vegetables and grains are going to be the primary staples in our diet I figured vegetarians would be my go-to people for advice.

I make veggie fajitas, stir-fry, veggie fried rice, a veggie pot pie type thing. I eat a lot of beans, too.

Watching. I think a lot of it is to make sure you're still consuming enough protein and iron which you can get from many other foods. But I'm also not a veggie person I like fruits but I can only eat so much without getting a belly ache.

I am not a vegetarian but my favorite meatless meal is Spaghetti squash lasagna by Skinnytaste. Look it up!
