Since he loves peanut butter make him an apple peanut butter sandwich!
Core it, and slice it horizontally. Spread the PB on one slice and then top it with another slice. So good and healthy too and he gets his PB still.
Carrots and ranch
Cheese and crackers
Honey sandwich / jam sandwich / ham sandwich etc... with sliced fruit
Yoghurt with strawberries and bananas, blueberries and raspberries
Veggie mix - cucumbers, cherry tomatoes, celery, carrots etc.
Kids go through stages like that. Ryan is right now with Mac n cheese!
What I do when he's not eating a variety is get some baby food (like stage 1 or 2) an mix it in with the food he eats. If you do it right you can't tell it's there. Like carrots and/or squash in Mac n cheese. It's almost the same color and just put like a tablespoon or so in there and you can't taste it. I bought the sneaky chef book bc Ryan goes through stages where he won't eat good so that's how I get his fruits and veggies and protein in when he's like that. It works
