New favorite potato recipe!

I made this last night and just thought I'd share! Not really sure what to call it though!

8 med. Potatoes
2 cups of grated cheddar cheese (or more if you want them extra cheesy)
1 1/2 cups sour cream
salt and pepper

-Cook potatoes until soft and mash with out butter or milk
-mix in sour cream and 3/4 cup of the grated cheese and salt and pepper to taste
- transfer into an ungreased casserole dish and top with remaining cheese
-bake at 350° until the cheese is bubbly and melted and it is hot all the way through.

I would call it something like twice baked potato casserole. Same concept it seems like, except for not putting it back in the peel lol

I wish I had some potatoes, it sounds good
