Yeah you can. And the cheese, no. It will be a bit thicker tham Velveeta. But sounds yummy!!! :-D

As long as it melts  

You might want to add some butter and milk to make it creamy like velveeta

What I would do is take a tablespoon of butter melt it in a pan, add a full tablespoon of flour mix it really well, pour some milk in it and whisk it till it becomes thick, then add the cheese in keep whisking till it becomes a sauce add pepper to taste, and then you have basic cheese sauce. I add hot mustard in my for chip dip. lol
