Healthy sides for dinner.

I'm trying to cut potatoes out of our diet entirely.

I'm basically a mashed potato addict. I do at least use Smart Balance "butter". I know white potatoes are worthless nutrition wise, though. Other than that we have one or two veggie sides, and have zero other ideas. We are pretty boring.

So HELP please!

noooo   We have been eating over at my mom's alot lately but I've heard a bunch of people say they are amazing. My little cousins will only eat those now instead of potatoes.

Sub them with sweet potatoes. cauliflower puree, parsnip puree,

You can also browse the frozen veggie isle in your grocery store and get some ideas that way. You can purchase a few bags for around $1.50 each to get an idea of what you would like to start serving as sides then start buying fresh as soon as you figuring out what works best for your family and your meals.

we mash pumpkin and sweet potato ... pumpkin and zuchini if you're getting rid of all potatoes entirely.

I've never ate a sweet potato before. I guess I'll have to try it sooner or later.  

DH loves broccoli and cheese, but I hate cheese. I need to force myself to just eat broccoli lol

We eat lots of asparagus, side salads, and broccoli & cheese. Corn on the cob sometimes (I know it doesn't count as a vegetable), black or pinto beans, sliced tomatoes... I don't know many veggie recipes so I keep it to raw or steamed for the most part.

Saute' the broccoli in light olive oil, fresh sliced garlic and some pepper. Yummmmm

The cheese isn't really all that "healthy".

You can boil parsnips like you would potatoes and mash them like potatoes as well. better nutritional value as long as you don't goop them with all the butter and such.

Cauliflower mash - chopped cauliflower, zucchini, leeks. Boiled til soft. Mashed with light butter and milk.

Sweet potato mash - chopped sweet potato, a couple regular potatoes. Til soft. Mash with light butter and milk. Add in chopped thyme.

Greek salad - chopped cucumber, tomato, capsicum, red onion, feta and light Greek dressing or a lemon vinaigrette.

Garden salad - mixed lettuce, cucumber, tomato, cheese, carrot, and dressing of choice.

Steamed veggies - capsicum, broccoli, carrot, cauliflower, baby corn, snow peas, beans, etc.

Creamed mushrooms - mushroom slices, browned in light butter, then light thickened cream and simmer.

If I think of other I make I'll post them too
