I can't afford instant stuff so it's all homemade here right down to the bread, lol. I think a favorite is leftover stew, when I take leftover chicken on the bone and boil it for about 4 hrs to make a rich broth and then I start throwing in any leftover veggies, rice, potatoes and any other veggies I feel like into it. I don't even have to use salt usually, so yummy. For my son I'll even make dumplings on occasion, he adores them. Other nights it'll be baked chicken with veggies and rice, steak with a veggie and quinoa cooked in broth, or plain old steamed broccoli mixed with shell noodles and grated cheese for homemade mac n cheese, yummy. When I feel ambitious I'll make stuffed steamed buns, but those take a while so I always make enough for the freezer too, that way I have a handy easy meal when I don't have time to cook. I've only got 4 left, I better make more soon. Tonight it was broiled salmon, homecanned beets and lentils with sauteed onions and summer sausage mixed in.
