A question to vegans and veggies: Is there a healthy eggless egg substitute out there? It would need to have a similar texture to eggs when scrambling, and it would also need to be a comparable bonding agent when baking. Thanks in advance!

For baking I use applesauce or pumpkin. I don't eat eggs like scrambled eggs so I've never looked into a substitute for that.
