I like making fajitas. They're very low calorie and filling.
I use 100 calorie tortillas, 1 bell pepper, 1/2 onion, 2 pieces of boneless skinless chicken breast, lemon juice, seasoning(i use lemon peppper but u can ise any seasoning u want) and olive oil.
Cut the thawed chicken into strips. Put in a pan of preheated olive oil. While this cooks cut onion and peppers into strips. When chicken is close to done add onion and peppers. Add a splash of lenon juice. Put a lid on the pan and let it cook. Stir often. When veggies are done and chicken is fully cooked add seasoning to taste.
I like to put salsa and sour cream on my tortilla but SO like cheese and salsa. You can put what u want on it. Add the peppers and chicken.
For taking it to work just refrigerate it all separated and heat and prepare it at work. Or you can eat it cold if that appeals to you.
