Nutritionists needed!!

Okay I'm concerned that my 15 month old isn't getting enough everything from his diet. I am a first time parent so PLEASE tell me what I need to take out, try, change, and ANY suggestions to get him to eat veggies is most welcome. Okay here's what he eats on an average day.

Breakfast:
Two scrambled eggs with cheese,
one piece of toast with butter.
Sippie cup of milk .
OR
Multi grain cherios with milk
Sippie cup of apple juice or water
Banana or cut up orange

Lunch:
Peanut butter sandwich
banana or gapes
crackers
OR
Hummus and cheese sandwhich
cookies
banana or grapes
Sippie of water (always at lunch)

Snack:
Yogurt
Sippie of milk

Dinner: (Usually when mommy and baby get home from work)
Pasta with cheese
Sippie of milk
Cottage cheese

After dinner snack (always eats junk food I get for myself for after work)
Chips
or
cookies
or
juice
or
popcorn

He hasn't eaten a veggie since he was 6 months.

I'm not a nutritionist, just an experienced mom. My kids can't stand vegetables. I have to sneak them into their foods. Since your child likes hummus, you can sneak some peppers in there. My kids love zucchini bread and I make green smoothies for them.

No funny I used to be! Before I had DS I was one for 7 years. But he absolutely HATES meat. REfuses to eat it. Even like ground beef. SO he's a veggie by choice I guess.

I'm actually really impressed with what-all your kid eats... lol. My son is suuuper picky. The fact that you get your LO to eat not one, but TWO scrambled eggs is impressive in my book. Ha.

He's allergic to most peppers :/ Especially cayenne. But the zucchini bread I eally need to try. He hates when it's chunks though. Sometimes I can sneak in a can or two of sweet potatoes into his pancakes.

Oh yeah? Haha yeah he eats a lot but if it were up to him it would be junk. He just ate a bunch of pringles because I'm feeling lazy tonight. Haha he's also peering at me from behind my laptop. What a cutie. I keep turning to him saying "hiiiiiiii" and he just laughs and runs away.

Lol okay just making sure before I made suggestions.


Smoothies are a moms best friend. I add kale, spinach, carrots my kids are none the wiser.

Try cubes of tofu, cauliflower crust pizzas (easy recipe if you want it my kids have no idea they're eating veggies), purée veggies into sauce.

I need to try that!! I dunno if he'll eat pizza. The food I mentioned is actually the extent of food he'll eat. He doesn't usually like pizza unless your eating it and won't let him have any. He hates so many foods haha.

You can just make it like flat bread with a little cheese and see if he will eat that.

Easy peasy!

Rice a cauliflower and steam until cooked.

1 cup riced cauliflower
1 cup mozzerella
1 egg
Some Italian seasoning and garlic to taste

Bake on cooking sheet lined with parchment paper at 375 for like 10 min. It gets a bit golden colored.

The toppings need to sautéed before you put them on (after the crust has cooked)
