What kind of soup, any good recipes? I love soup but never make it. I'm in a weird cooking mood and I'm dying to be in the kitchen but dinner is already in the crock pot and lunch has already been made so i figured i might make a few things to freeze for the rest of the week.

baked ziti. super easy.

1 package (15 ounce size) part-skim ricotta cheese
2 eggs, beaten
1/4 cup grated Parmesan cheese
1/4 teaspoon black pepper
2 tablespoons minced fresh parsley
1 package (16 ounce size) ziti, cooked and drained
1 jar (30 ounce size) pasta sauce
1 cup shredded mozzarella cheese
1 lb ground beef

Cook ground beef
prepare your pasta sauce
Make ziti noodles,
mix sauce with noodles and ground beef, and layer half the batch on the bottom of the pan
mix together ricotta cheese, eggs, parmesan cheese, and spices and spread the mixture over top of noodles
place the other batch of pasta on top of the cheese mixture, cover with mozzerella and freeze

I do minastroni.

I kinda wing it, but I use carrots, squash, zucchini, onion, garlic, basil, chicken broth, celery, and red pepper. I cook it for about an hour or until the veggies are soft then freeze it into three different meals.
