Crochet and yarn sizes.

The pattern says 10ply. I think that's worsted? Anyway. I can't find 10ply only 8ply and 12ply. Is it better to go up or down if I can't find the right size wool?

I'd do 12 ply and size down a hook.

And if a pattern uses for eg acrylic, does it matter if I use something else like merino? Will it change the size or outcome of the item?

Just downsize one size? Would I use that same rule using a smaller yarn and bigger hook? Just so i know for future reference.
