We had a super-yummy and kid-friendly dinner tonight. My kids LOVE cheeseburgers, but I get sick of having cheeseburgers once a week. It just gets boring. So tonight we tried a new thing. Cheeseburger-Pockets. I took pizza dough and stretched it all out, then cutting it into rectangles. I filled it with a mixture of ground beef, onion, bacon, relish and cheeses that I had cooked beforehand. After filling the rectangular pieces of dough with the mixture and folding it up like a little hot-pocket I baked them and the kids dipped them in ketchup. They were delicious. I'm sure you could pack them with just about anything.... like pulled pork pockets, bean/cheese pockets, etc.. Just a suggestion for anyone looking for something fun for the kids for dinner.
Also, does anyone know if I can just microwave red lentils for LO? I don't want to boil them because I only need a single serving for him. Can I just microwave them in a microwave-safe dish? I have never cooked them any other way than in a pot on the stove.
