French fries

posted 23rd Jan
I've never really made my own fries before but I'm going for it tonight. So for those of you who make them, how do you do it? What temp do you set the oil to and how do you season them?

We are having hot wings tonight

I don't know exactly what temp because I just do mine on the stove, I do medium heat, I sprinkle with seasoned salt after they're done. If I'm feeling froggy I'll dunk the fries in a flour/egg/season salt batter and then fry them.

I bake them!

I set the oven at 425 and cut the potatoes into fries. Then I mix a few Tbs of olive oil with whatever seasons I want (usually chili powder, onion powder, garlic powder...) and I coat the potatoes with them. I spray a glass pyrex dish and dump the fries in. They bake for an hour and I stir/flip every 20 minutes. Best fries EVER!

I slice up a potato, and spread it over my stoneware. I sprinkle garlic salt on it and then pour over a little bit of olive oil. I bake them for like 45 minutes at 450 degree, turning them once.

I use this recipe:
http://www.yummly.com/recipe/external/Simple-Oven-Fries-TasteOfHome

Simple Oven Fries

Ingredients

  • 3 large baking potatoes
  • 1 to 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  • Cut each potato lengthwise into eight wedges. In a large bowl, combine the oil, salt, paprika and pepper; add potato wedges and toss to coat.
  • Place in a single layer on a greased baking sheet. Bake at 450° for 20 minutes. Turn/flip over potatoes; bake 10 minutes longer or until golden brown. Yield: 4 servings.

this may sound weird, but if you are deep frying them...dice up and apple and deep fry it with the fries. it brings out the flavour. a lot of chip stands do that. and use red skin potatoes
