This is my menu for this week. I made the Tom Kha Gai and Thai Salad tonight. Very light. Packed with flavor.

Just don't cook and go out for some Pho!....with brisket and sliced round steak ...and spring rolls. <drool>

The best thing I've EVER eaten is chicken ceasar salad! YUMM! Not very innovative, but as long as you don't load it up with parmesan and croutons, very healthy! And easy on the dressing. In fact, that's what I'm having tonight! Lol.

But another thing DH likes to make is baked tilapia with rice and steamed broccoli.

Most people probably don't even have a clue, but I'm telling you

FALAFEL Pitas are amazing

All vegetarian (we aren't vegetarians, but like to have a meat free meal from time time) and absolutely delicious.

I make a bigger batch each time I make them an its still never enough. My kids, big and small all love them and always want extra servings.

We're doing a Falafel special this week at work. Hopefully it goes over well. I'm putting it on my menu for next week.

I looked up falafels and they don't look too good. Lol.
I do really like pitas with cucumbers but I don't have pitas!
I also don't have stuff for salads :/
I should go shopping. Haha.
I have chicken and canned veggies and some other random stuff so I guess I'm looking for chicken recipes mostly but I think I will try some of these other things when I go shopping.

Ceasar salad is one of the worst things you can eat. Seriously.. look at the nutrition on the bottle. It's like...200 calories per TB .. and 190 of them are fat calories. something along those lines. I stopped eating it almost completely after reading that.

If done poorly, yes.

I use canned garbanzos and the rest all fresh ingredients. Not something you would expect a 19 month old, 5,7, and 8 year old to enjoy, but it's probably their favorite meal.

Veggie fajitas!
1 each of red, yellow, orange and green bell peppers
1 whole large onion
Mushrooms
Slice and cook in.a skillet with a small bit of oil, sprinkle with a little seasoning if you want. Can also add chicken.

Serve with Greek yoghurt (plain, instead of.sour cream), a little bit of cheese, some salsa and fresh lettuce on a whole wheat tortilla

I don't know if you know who Anthony Bourdain is, but he said that hands down, without question, Pho would be his last meal if he was scheduled for execution (morbid, I know).
