Keeping Track of Menus.. The Smurf I'm Making For Dinner

My weekly dinner menus that is. I thought it'd be a good idea to start cataloguing them as I'm always trying new things and often completely forget about them for a good while. I occasionally run into menu writer's block so, these will be good for me to have to look back on.

And being that there's always a recent "What the smurf should I make for dinner?" thread going on, I figured i'd bring them to BG   Writing them up this way is also good for practice, especially in the Menu Engineering class I'm taking right now.

So for this week: (and this might be small, just view image it - I'd love to have a better program with pretty texts but I'll hobo it with picmonkey for a bit)

I'm jealous! My husband has many superb qualities but he is THE biggest pain in the butt regarding food. He has a huge list of "NO" and has to be "in the mood" for lots of meals. He is very "meat and potatoes" and rather boring. He has gotten a bit better and I've learned to deal with it, but I'd LOVE to make awesome, creative meals each night. I'm a total foodie.

I have a binder of "approved" recipes that i put together so we dont forget about some winners. I probably only "get" to try a new recipe once per week.
As a 2013 resolution, he agreed to 2 new recipes per month from my AWESOME cookbooks.

I suppose I am lucky that DH is always willing to try new things. It's the kids really that don't enjoy my menu hopping, haha. But I'm determined to develop well-rounded palates in this house!

You're a nutritionist, right?

yes. Sometimes, it seems that my life revolves around food ;-)

yes, kids can be a challenge. My 4 yr old is pretty good. Some of her friends like very little besides junk. It's good that you keep trying. They WILL come around.

Husband supports my hobby in MANY ways. I think that he thinks it allows me to cut him some slack regarding his likes. I was THRILLED the other day when he announced that he likes bacon again. lol

What? How do you ever stop liking bacon?!

I'll admit, DH probably won't enjoy the tandoori chicken. He hates indian food but I'm determined to get him to submit  


So, what kind of schooling did you earn for your profession, if you don't mind my asking. I'm considering going that route myself.

He deserves recognition for eating what you make! Good husband!

I went to University of Florida. They had a "coordinated undergraduate program" meaning that i graduated and was eligible to take the exam to be a Registered Dietitian. Most programs require a separate internship. In my program, we just had to stay in school for a summer or 2.

It's an OK field. There isnt much money in it. I needed more money and went into medical sales. I have a neighbor and my LO's babysitter who are both in school to become RDs. It is a great education.

So your degree is specifically in Nutrition then? Do you need to put in a certain amount of hours to get the designation (apart from the exam)?

I'm looking to do a few pre-reqs and then transfer to the University of Mississippi for their MS program. I'm hoping to eventually get in good at one of the great children's hospitals around here (namely, St. Judes).

I'm mostly concerned with all the chemistry involved. Bio I've always been good at. Chem. Scary  

Yeah, it's one of those fields that are important but don't pay much. Like teachers.

I have a Bach of Health Science in clinical nutrition. I'm older than dirt. I graduated in 1987 and i assume the programs and requirements have changed at least a little. My guess is that all programs will require hours of practical work. i dont know how the work would be defined for a degree.
While most jobs dont pay much, i loved the education and the experience. I'm a science-type so learning about nutrition AND food science was perfect. If i stayed in the clinical setting, i would have pursued a job in a childrens hospital. It's VERY rewarding.
Dont worry about chemistry. It's important but you can just get some extra help with a tutor.

I really need to ask around but yeah, from what I was reading it seemed like you need about 900 hours or thereabouts these days.

I definitely plan on quitting my job and getting a tutor for all the chem stuff, just hoping to get it out of the way first.

I'm sure I'll have lots more questions as I recall them, haha! Thanks!
