I like to get some onions, bell peppers, garlic and chili peppers (to taste) sauteeing in a skillet with some fajita spices, then when they're nice and softened I put them in a bowl and fry the chicken in small strips so it gets all the juices from the onions etc, put more fajita spices on there and once the chicken is cooked I throw it all back in and heat the veg through.
Serve in the middle of the table with rice, grated cheese, salsa, sour cream, guacamole and tortillas!

I slice up red, orange, yellow and green peppers, a whole onion (or two if I have small onions) and mushrooms plus some chicken breasts. In one pan I put a little bit of oil and heat over a medium, high heat and I cook the veggies. In another pan I use a little cooking spray and cook the sliced chicken. When the chicken is done, I add in the veggiea and a little bit of taco seasoning. Serve with greek youghurt or sour crea, salsa, cheese, avocado and tortillas and chips

This is the way we do them now.

Cut onion, red and green bell pepper into strips. Also cut your meat into strips. (chicken, steak. obviously don't strip shrimp lol)

Preheat the oven to 400. Mix 2tsp of oil, 2 tsp of chili powder, 2 tsp of cumin, 1/2 tsp of garlic powder or salt, 2tsp of dried oregano, and salt to taste. This is the fajita seasoning

Put all in a baking dish, along with a can of diced tomatoes with green chiles. Mix everything up so the seasoning is on everything

Bake uncovered for 20-25 minutes.

Then serve however you want, on tortillas. I just put sour cream on mine lol.

I used to do mine on the stove, but now that I've tried baking them...never again on the stove! They have SO much flavor now! Here are some I made the other night. Chicken fajitas. I've also tried shrimp, they were just as awesome!
