Cheap vegetarian meal ideas please!

DH has decided to make a bet with me that he will get down to 220 by this time next year and in return he will get the entire tax refund (if any) to go towards a new motorcycle. He is currently 280. Also to go along with that he said he is going to have a more vegetarian diet and limit meat. So I need to figure out some cheap meals for my picky eater of a husband that will give him all the nutrients he needs. Though I am pretty sure he won't make it because he loves his junk food and meat too much.

He does not like tofu, creamy foods (soups, alfredo sauces, casseroles....), most seafood, pumpkin well most squash actually, and some seasonings... I am sure there are more that I can't think of.

He is mexican and does eat spicy foods but I don't eat spicy.

Taco salad
Spaghetti
Eggplant lasagne
Chickpea curries
Chickpea stirfries
Chickpeas that are just baked with garlic powder cumin and paprika make an awesome snack
Mushrooms are a great meat substitute
Lentils are also awesome

No eggplant or lentils either. Tried it and it was a no go with him.

Chickpeas are garbanzo beans right? I know he likes those in chicken soup but not sure if he will eat them in anything else.

We have made mushroom fajitas before and he liked those so I will have to do that again

Yes they are.

Honestly, have you tried spices and that? I mean, eggplant has little to no flavour of it's own so spices and herbs and that can really change the flavour of the dish

I will have to experiment then. I know he doesn't like hummus but maybe in a stir fry...

I think not liking eggplant more of the texture to him but there is a flavor too that I am not all that fond of no matter how it is cooked.
