What's cooking for dinner?

I am making marinara sauce right now. Then in about 2 hours I will make the dough for my ravioli's for dinner. Deciding on just ricotta or adding in parmesan as well for the filling.

It is only 2pm so I have a bit of time before dinner 

Anyone else having anything good for dinner?

Taco's aren't bad. We usually do tacos once a month or so, more if the hard taco shells are on sale haha!

I'm making a pot of vegetable soup.

I just made the best refried beans today  I sauteed half a small onion in about 2 tablespoons of lard (yes I use lard!) then added in the pinto beans I made the other night. Mushed 'em up then adding some parmesan cheese. MMMM....

Well, I was going to make chicken marsala with mashed potatoes. Both of my girls are home from school with a stomach bug.

But I was thinking of making rissoles and instead of using brown rice this time, I'll use quinoa. Probably spice them with garlic, thyme, parsley a bit of lemon zest and S&P.

I have never used quinoa. Is it used as a side or how do you use it?

Haha we usually have it on a day when I worked the overnight because it is the simplist (sp?) thing to make lol
