FRESH herbs

What the hell do you do with your left over FRESH herbs? You know, when the recipe only calls for a tablespoon of FRESH basil, thyme, cilantro, parsley, etc. and you can only buy it in massive amounts at the grocery store.

What do you do with it if you aren't planning any other meals that week that use it? Is there a "best" way to store and prolong it's life? Any tips?

You should grow your own little plants

Any quick tips for drying or freezing? I've done neither before.

and lolajessup: I have a BLACK thumb. Not even things I want to keep alive (mothers day plants from my son, for example) survive me.

I just use like a third of what they say and just use dry. lol.   I've thrown a lot of herbs away.

I usually end up doing that too. But things like cilantro...ya know?
