Banana Muffin Recipe

Tonight I made the best recipe of banana muffins. Hands down. Amazing. I bake a lot and have been trying to keep track of ingredients and measurement. Anyway tonight was a win.

In medium bowl:
1/2 c oats
1/2 c milk
let sit and absorb some of the milk

In large bowl:
1/2 c whole wheat flour
1/2 c unbleached white flour
1/4 cup ground flaxseed
1/2 tsp salt
1/2 tsp baking soda
2 1/2 tsp baking powder
heaping 1/2 tsp nutmeg
1 tsp cinnamon
heaping 1/2 tsp ground ginger
Mix with wire whisk until well incorporated.

In oatmeal and milk:
1/4 c butter, melted
1 egg
1 cup mashed banana
Roughly 1/4 c appleasauce
1/2 c pure cane sugar
Mixed with beater on medium speed about a minute. And then poured into the large bowl. Mixed about a minute on medium speed. And stirred in

About a 1/4 bag milk choco chips
about a 1/3 cup sweetened coconut.
Greased muffin pan (I did 9 muffins filled 3/4 and a pan of 12 mini muffins) baked at 425. Approx. 18 minutes.
