Love doing roasts. They always go a long way.

Have you ever had spaghetti squash?
We've used it for spaghetti noodles, chicken parm boats (cut in half, roast in oven, fluff with fork, lay chicken breast strips in, cover in spaghetti sauce and mozzarella cheese, bake again), and as the noodle layer in lasagna.

A whole chicken? I'm always terrified of the innards it sounds like I should get over it. 4 meals from one chicken sounds very time and cost effective.

Okay some cheesy potato soup, loaded baked potato skins(quick and easy), adding some shrimp into the salad if you like and no ones allergic

I have not had squash in ages. How do you use it as noodles?

Those sound yummy. Shrimp we could always do in the side for our own addition. And we love potatoes. So those ideas would be fun.

You can get it without all the innards....I always buy utility chickens, they may be missing a wing, leg or some of the skin, but they are always cheaper.

After you cook it (either in the oven or microwave for quicker results), it's soft enough to just scrape with a fork and it comes out in little strands.
This lady's blog shows you how to scrape it into "noodles". This recipe is also good!

Hmmm I don't think I've seen those. I might have to go to the local butcher and not the regular store. But that might be a good idea to start doing anyway.
