type 1 diabetes?

I may be a bit of a hypochondriac...but i'm not really trying to diagnose my kid either. I do worry too much...but...I'm in nursing school so I know a little about it..
He's ravenous. He eats ALL damn day. It's exhausting. And he eats more than I would ever think a 14 month old could. More than some 4-7 year old I know. He throws a FIIIITT if you try to get him out of the high chair before he's eaten a 12 year old's meal, lol. Even his daycare was saying things like...how does he eat that much? He clings to his highchair screaming everytime they or I try to get him out. He's constantly going to the pantry and whining. And he's about 23 pounds, long and lean. Hardly an ounce of fat on him.
The thing that makes me NOT think diabetes is that it really started after he got off formula. He was getting nutramigen with rice (for reflux)...and after we switched him to coconut milk I noticed his appetite increasing. But it has gotten a bit ridiculous. And it can't be a growth spurt because it has been going on non stop for over 2 months.
He also pees a LOT at night. He leaks out of his diapers almost every night. I've had to get the overnight kind, but then they broke him out.
He doesn't seem excessively thirsty though.
I plan to make an appointment monday to discuss this, and his very long lasting cold he's had...but I was wondering if any other mama's out there have a type 1 kiddo, if these were similar symptoms they noticed and if they were around the same age?

He could be going through a growth spurt?
Tanner hardly eats at all which worries me a lot.

The only thing I can think of would be the growth spurt, have you asked your pedi about this?
Another thing is he may not be eating food that fills him up all the way?

he doesn't get the filling of whole milk like most kids...he does get coconut milk and he eats a lot of carbs though. and i don't know if growth spurts can last that long. i'm going to make an appt monday.
