Eggplant?

I have never in my life tried eggplant. What does it taste like? Is there anything you could compare it to? What are some amazing recipes that even my somewhat picky SO would love?

Eggplant is amazing.
Dh makes it with chicken, beef, pork, and sometimes tofu.

There are some Italian recipes that use it as noodles in baked dishes that I haven't tried yet...

It's a vegetable...a delicious little vegetable...if your SO likes italian food then make eggplant parmesean that will disguise it in cheese and sauce lol

It's okay, but I'm not a big veggie person anyway.

The only time I've had it is on salads at Italian restaurants.

I LOVE almost all veggies. So I'm hoping I will like this lol.

I don't mind the taste of vegetables, it's usually the textures that I can't get over.   I think eggplant is very similar to tomato in texture, firmness, ect.

I've always heard eggplant parmesan is delicious. If I could cook, I'd definitely try it out.

It;s really good, but I'm sure frying the smurf out of the eggplant takes away the healthiness lol

I hate eggplant. I dont mind the taste but the texture is just blech.
