You need some protein in there. Here is a meal plan from Peta. You will probably need to be on a vitamin also because most Vegans or vegetarians have a hard time getting all of their needed vitamins and minerals.

It's totally possible. I hate soy and tofu and don't eat root vegetables (carrots, potatoes, sweet potatoes, garlic, etc) and I don't eat any fruits with a juicy red center (pomegranates, tomatoes, watermelon).

Look up Indian food recipes. Most of them are vegan and the ones that aren't can easily be made vegan and they are tasty.

It's possible. You may need to work on introducing more things into your diet though. Do you like almond milk? It's a little different than soy. I heard that you should try an item 15 to 20 times before you decide you dislike it. Just like you do with a baby.

Good luck.   I couldn't go do it. I live on carbs, cow and chicken. Sometimes I'll throw in some turkey or pig.

If you eat a balanced diet, you don't need a vitamin. I haven't had vitamins since I went veg 5 years ago.

That list of meals you gave is not nearly enough calories to live on.

What about fish? Eggs?

Look into things within the Mediterranean diet. Hummus is awesome. Greek yogurt is high in protein.

I've started using that as a rule for myself! I actually really like tofu now. I hated it in the beginning.
