Can you substitute baking soda with baking powder? Or is it two different things? (Not a baker lol)

Just use powder. Honestly, it doesn't make that big a difference in cookies. Baking powder is baking soda and cream of tartar - the base and the acid in one to create the rising action. Recipes with baking soda will also have something acidic in it to create the reaction. Not a huge difference.

I dont put baking soda in my biscuits.

You can make a plain biscuit recipe and just chuck some choc chips in there? That's what I do. They aren't chewy like most American cookies I find to be. These are more softer and slightly crumblier like a denser shortbread KWIM?

250g butter
1/2 cup sugar
vanilla essence
1 egg
2 1/2 - 3 cups of flour (I usually do this by ear)
1-2 tsp baking powder (I do this by ear too)
choc chips.

Mix butter and sugar. Chuck in vanilla and egg and mix. Throw in flour and mix until it's ALMOST dough then chuck in the chips (otherwise the dough gets quite tough)

These can be rolled out and cut into shapes or for an easier way to do it, roll it out into a sausage, wrap it in cling film and chuck in the fridge for 20 minutes. Take it out, slice it up and voila! Lovely round choc chip biscuits.
