Fried potatoes

Do you have a good recipe for them? I've tried making them once and they didn't turn out, they were still hard. I want potatoes with our meal tonight but I don't want mashed because we always have them and I don't want baked. I don't want any cheesy taters either so I'm thinking fried. I've tried looking up recipes but none of them sound like they will get tender enough.

Fried potatoes, I feel, have to fry for like ever. I always use a little vegetable oil in a wok or skillet and then just add the potatoes. I let the potatoes cook a while before I add my onions since onions don't take as long.

I use butter and onion. Cover the pan on medium heat for 10-15 mins then I kick the heat up to high to brown them.

See that's what I was thinking and most of these recipes say just about 25 minutes. One said to boil potatoes some before frying and I wondered if that would work.

I wouldn't boil them beforehand. Just seems like extra work for yourself. Just make sure you give them enough time. I swear it takes a while. Maybe even 30-45 mins, just keep stirring so you don't completely burn the bottom, and since you want to evenly brown them.

my SO made some the other night and he just boiled them for a little bit to like half cook them before throwing them in a pan

I use the recipe on the back of the lipton onion soup mix box. Cut up potatoes, put them in a casserole dish.. pour a little vegetable oil on them and then a packet of lipton onion soup mix. Bake for like 35 minutes. sooo good.

Yeah, maybe a little longer. I flip them a few times so they don't stick and put the lid back on. Just keep cooking them until they are soft.

EVOO, potatoes, seasoning salt and pepper and whatever other spices you like. Just make sure it's on medium heat so you don't burn them. They're not hard at all to make!

ETA: and an onion!

Oh, and as for seasonings, I use a little seasoned salt, pepper, and very little garlic salt/powder.
