Always fry then with a yellow onion.
SOO GOOD. The onion caramelizes and adds extra flavor to the potatoes. You have to fry them for like an hour. Flip them every 5-7mins

I made it for Christmas brunch and there was NONE left and everyone loved them. Seriously, use that recipe!

If you cut potatoes width ways in little lines almost all the way through, drizzle them with oil and add a little salt then bake them they taste like chips. But healthier apparantly.

Covering the pan is what gets them cooked through.

ETA Should only take about 20 min if you keep them covered.
