4 eggs - beaten
2 cups shredded cheddar
1 can crabmeat (drained)
1 can spinach (drained)
1/4 cup milk
1 tbsp flour
salt and pepper to taste
2 pie shells
mix all ingredients, pour into pie shells
bake at 350 for 1 hr.

2 eggs, one package of frozen spinach (defrosted and well drained), one cup of sour cream, garlic salt, 8oz of shredded cheese, pre-made frozen pie crust.
Mix all together (reserve 1/2 the cheese for the top), pour into pie crust, top with remaining cheese and throw into a pre-heated oven 350 for about 25-30mins.
Sometimes I add ham or swiss cheese to it, I've also done artichocke hearts and feta inside.

You can do a lot with quiche!!! A few of my favorites are Quiche Lorraine which is bacon, a swiss cheese. Feta, spinach and tomato is yummy and shrimp and spinach is quite delightful! Quiche is actually fairly easy, it is just heavy cream, eggs whipped just to incorporate into the cream and salt and pepper. You cna buy a premade shell and blind bake it for 10 minutes (just bake without anything in it.) The put the fillers in with the cheese as well and pour the quiche custard over top and bake at 400 for about 15 minutes then check to make sure it set and take it down to 350 until done.
