Salmon fillet recipe?

posted 31st Dec
I have a salmon fillet an need to do some kind of easy appetizer for tonight. I don't want to do a spread ( I usually do a creamcheese salmon spread). Ideally, I'd like to grill it, but it's going to be below zero this evening, and I'm not sure i want to get the grill all set up and whatnot.

So, does anyone have any suggestions for n easy appetizer? I haven't baked salmon before, so I'm not sure how tasty that would be compared to grilling. But I'm open to suggestions!

this isn't an appetizer, but... i always bake salmon (because i have no idea how to use a grill, lol.)! i rub the top of each fillet with a little butter or olive oil, then i top with garlic powder, lemon pepper seasoning, chives (if i have them on hand), dill, a little salt and some lemon or lime slices. then i wrap them each in foil and put them on a cookie sheet and bake them. it always comes out really good.

sorry, i'm not any help with an appetizer, though. but, just saying that seems to be the best way for baking them bc they don't get dry.

Its going to sound weird but its really good, if you coat the fish in dill pickle chips, like crumb them up and put the fish in a bit of egg/milk mixture, foil it and cook it in the oven. lol I eat it on crackers when made like this. lol

We fish all summer long and make this, my kids as well as all the adults love this, its super good.

You could do salmon kabobs.

Or perhaps a kind of flatbread/foccacia deal (which you could make a flavored spread as a base, with creamcheese, mayo, goatcheese, sourcream or some other creamy combo - perhaps lemon dill, herbed fennel, fried shallot, sundried tomato, onion marmalade all come to mind). On that you could flake the cooked salmon.

You could do a crostini type deal and simply sear the salmon, slice it thinly and serve it rare over a crisp with some type of spread as the base as I'd mentioned before (I've done that here with tuna and a sriracha goatcheese)

If you have little tasting spoons, you could flake little bites with maybe like a pickled vegetable.

Oh, and the way we typically cook a salmon in restaurants (if not grilling) is by searing (seasoned) in an extremely hot pan, well on both sides and sliding the sautee pan or hotplate into the oven to finish.
