carrot cake (or spice cake) recipe

Anyone have one that is tried and true and amazing? What about a nice cream cheese frosting that isn't too sweet? DH is going to be 28 on tuesday, and I want to do something delicious and special for him! TIA

I don't have my recipe on hand but I always put crushed pineapple in it and it makes it soo good! For the cream cheese frosting I fold whipped cream (not sweetened, just the stuff in the carton you whip yourself) into it.

eta: I put toasted coconut on the sides of the cake
