We like to do fajitas a lot. It's super low in calories. We use sunflower oil for cooking or olive oil. We buy bell peppers which are at Walmart or meijer in a 3 pack for pretty cheap. They have one red, orange, and yellow. Then we buy one green pepper separately. We can usually get 3 meals out of them. I use half of two diff colors for every meal I choose to make.

Then I buy a bag of onions. Usually I try to go organic at meijer but if u wanna go cheaper any are fine. Idk if u get wic but we use our wic for whatever we can of course. we get the tortillas on wic too. But if u don't get wic Walmart has some really good olive oil tortillas that are 100 calories.

Then I buy the 5lb family bag of boneless skinless chicken breast from Walmart. Get out 2 pieces and thaw them.

I cut the two halves Of bell pepper, one small onion or half of a large onion, and the chicken all into strips. I pour some oil of choice into the pan. Do the chicken first. When it's about done I add the veggies. I sprinkle with garlic salt and some
Pepper or lemon pepper or whatever spices u want. And add some lemon juice (or lime juice if u choose).

Cover and let steam until everything is cooked and tender. Serve on tortilla. Salsa is very low calorie to add to it. Or just a small Amt of sour cream. I get meijer organic low fat sour cream. Shredded cheese. Whatever u wanna add.

This recipe usually gets us 5 fajitas maybe 6. Two for me and SO and one for dd. When I counted calories this was the lowest calorie healthy meal I made.

We are going to make fajitas. Just never get around to it! I have a meat market I buy our meat at and I do use WIC. We use a lot of organic stuff now as well!

I love meijer organics. I hate that there's not much fresh fruit right now though   but we get all the organic options of everything at meijer or the meijer naturals when they have it.
